JALAPENO CORN BREAD 
1 c. cornmeal
1/2 c. flour
3/4 c. onions
1 tsp. baking soda
2 tbsp. sugar
3/4 c. milk
2 eggs
1 sm. can whole kernel corn
1 sm. can cream style corn
3 or 4 jalapeno peppers
8 oz. mild Cheddar cheese, shredded
1/2 c. cooking oil
1 1/2 links hot sausage

Heat cooking oil in 9 x 13 inch pan. Mix all ingredients except the cheese in a bowl. Add a handful of cheese and pour hot oil into ingredients; mix well.

Take sausage, which has been boiled in advance, remove casing, crumble meat into mixture and mix. Pour mixture into pan and top with the remainder of the cheese. Bake for about 40 to 45 minutes at 350 degrees.
