JALAPENO CORN BREAD 
1 c. corn meal
1/2 c. finely chopped onion
1/3 can whole kernel corn, drained
1 tsp. salt
1 tsp. baking powder
1 tbsp. sugar
1 egg
1 or 2 jalapeno peppers, cut fine
1/4 c. cooking oil
3/4 c. milk
1 1/4 c. grated cheese

Mix well and bake at 400 degrees for 30 minutes or until brown. You could add green peppers or pimento for flavor and color.
