ICED TOMATO CREAM SOUP 
1 onion chopped coarsely
2 tbsp. butter
1/2 tsp. sugar
1/2 tsp. thyme
1/2 tsp. basil
1/2 tsp. salt
3/4 c. cream
6 tomatoes peeled & seeded
1/2 c. chicken broth
1/4 c. sour cream

Saute onion in butter until soft (about 15 minutes). Add tomatoes chopped, chicken broth, sugar, thyme, basil and salt. Simmer uncovered 10 minutes. Cool to room temperature. Whisk in cream and sour cream; salt and pepper to taste. Pour into 6 cups and freeze.
