EGG SPINACH SOUP 
1 pkg. frozen spinach, chopped
3 tbsp. butter
1 clove garlic, minced
2 eggs
2 tbsp. grated Parmesan cheese
Salt & pepper
1 lg. + 1 sm. can chicken broth

Cook spinach and drain well. Saute in butter and garlic. Beat eggs, cheese, salt and pepper, then add to spinach. Stir. Immediately add chicken broth. Cook 20 minutes and serve.
