3 eggs, well beaten 1 c. flour 1 c. warm water FILLING: 1 1/2 lb. cottage cheese 1 egg, beaten 1 tbsp. butter, melted 1 tbsp. honey or sugar Mix together eggs and water, add flour gradually. Beat until smooth, by hand so batter doesn't get bubbly. Heat 9 inch skillet, lightly greased. Pour small amount of batter into pan, tip from side to side to cover bottom of pan, pour remainder of batter back into bowl. Cook on one side until pancake pulls away from edges of pan, then toss pancake onto a towel, fried side up. Continue cooking pancakes, until all batter is used. Make filling by mixing all ingredients together. Take 1 to 2 tablespoons of filling and place in the middle of each pancake. Fold over edges and place folded side down in a baking pan. Bake for 20 to 30 minutes at 350 degrees until brown on top. Serve with sour cream, may also be filled with applesauce. Serves 3 to 4. |
