CHICKEN ANGELO 
8 oz. fresh mushrooms, sliced, divided
4 lg. chicken breasts, skinned and boned
2 eggs, beaten
1 c. bread crumbs
2 tbsp. butter
6 oz. sliced mozzarella cheese
3/4 c. chicken broth
Hot cooked rice or noodles

Place half the mushrooms in a 13x9 inch baking pan. Dip chicken into beaten eggs, roll in bread crumbs. In skillet melt butter over medium heat. Brown both sides of chicken in skillet. Place chicken on top of mushrooms. Arrange remaining mushrooms on top of chicken; top with cheese. Add chicken broth to pan. Bake 350 degrees for 30-35 minutes. Serve over rice or noodles. Serves 4.
