TACO JOES 
1/2 lb. lean ground beef
1 med. onion, chopped
1 clove garlic, minced or pressed (optional)
1 (14 1/2 oz.) can tomatoes
2 tbsp. catsup
1 to 2 tsp. chili powder
1 tsp. salt
1 tsp. Dijon-style mustard
4 lg. hamburger buns, split (plain or with sesame seeds), buttered
1 c. shredded Cheddar cheese
2 c. shredded Iceberg lettuce
Diced tomatoes for garnish
Black olives for garnish
Taco sauce, if desired

Preparation:

1. In skillet, saute beef, onion and garlic until meat is no longer pink and onion is tender.

2. Stir in tomatoes, catsup, chili powder to taste, salt and mustard.

3. Simmer, uncovered, for 10 minutes or until most of the liquid has evaporated.

4. Spoon meat mixture into hamburger buns. Top with shredded cheese and lettuce. Sprinkle with diced tomatoes. Serve immediately with carrot and celery sticks.
