SYRIAN POTATO SALAD 
6 cooked potatoes
1 clove garlic, crushed
1 bunch parsley, chopped
1/3 to 1/2 c. salad oil
Juice of 1 lemon
Salt and pepper

Boil potatoes in jackets until done, do not overcook. Cool in their skins only until they could be easily handled. They should be seasoned while still warm. Dice potatoes. Mix other ingredients thoroughly add to diced potatoes. Mix and chill until served.

This is an excellent, straightforward recipe. Please cook the potatoes in chicken broth for optimal results. Also please use good olive oil where the recipe says "salad oil". If you cook the potatoes in chicken broth, you will not need to season this with salt. The flavor will be excellent.
