EAST TEXAS BEEF CASSEROLE 
1 lb. lean ground beef
1 med. green pepper, chopped
2 to 3 lg. tomatoes, chopped
1 recipe corn bread or 1 pkg. mix
1 med. to lg. onion, chopped
2 to 3 cloves garlic, pressed
1 reg. size can pork and beans
Salt and pepper to taste

Brown meat with garlic. Drain liquid off. Add onion and peppers. Cook; then add pork and beans and chopped tomatoes. You may use stewed tomatoes, but fresh is much better. Add salt and pepper and cook 5 to 10 minutes. Pour meat mixture into casserole dish. Pour corn bread mixture on top but do not mix. Bake in 350 degree oven until corn bread is done.
