DOMINIQUE'S CARROT CAKE 
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
4 eggs
2 cups sugar
1 cup vegetable oil
3 tsp. cinnamon
3 tsp. nutmeg
1 tsp. ginger
2 1/2 cups grated carrots

Preheat oven to 350°F.

Mix flour, baking soda, baking powder and salt in a bowl. In another bowl beat eggs, sugar and oil. Add cinnamon, nutmeg, ginger and carrots. Mix all ingredients together.

Bake at 350°F for 30 to 40 minutes or until golden brown.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese
3 cups confectioners' sugar
1/4 cup (1/2 stick) butter
1 tsp. milk

Mix all ingredients together on low speed for one minute. Then mix on high for one minute. Spread on cake.
