CREAM CHEESE TARTS 
2 lg. pkg. cream cheese
3/4 c. white sugar
3 egg yolks
3 egg whites
Pkg. of graham cracker crumbs

FILLING:

1 c. sour cream
3 tbsp. sugar
1 tsp. vanilla
2 drops food coloring

Preheat oven. Prepare 3 tart pans by buttering well with butter. Shake graham crumbs into pans. Shake out excess. Cream egg yolks, sugar and cheese in large bowl and fold into stiffly beaten egg whites.

Fill each cup and bake 15 minutes. Remove from oven and let stand. Center will sink.

Now fill recess with sour cream mixture and return to oven for 5 minutes more. Cool 20 minutes in pans (or longer if possible). Perhaps chill for ease in removing.

Loose and remove CAREFULLY! Enjoy.
