ZUCCHINI BREAD 
3 eggs
1 1/2 c. granulated sugar
1 1/4 c. oil or 3/4 c. oil plus 1/2 c. applesauce
1 tsp. vanilla
2 c. grated zucchini
3 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 c. nuts (optional)

Beat eggs, sugar, oil, and vanilla until thick and fluffy. Add grated zucchini. Sift flour, baking soda, powder, salt, and cinnamon. Add to zucchini mixture and mix well. Pour into greased bread pan.

Bake at 350°F for 50 minutes.

Used sugar in the raw, local pecans, and whole wheat flour, and made into the best muffins I've made in a long time!!!
