GREEN RICE CASSEROLE 
2 eggs
2 tbsp. oil
1 can evaporated milk
2 c. cooked rice
1/2 c. cooked spinach, chopped
1 c. shredded med. cheese
1/4 tsp. salt
1 tbsp. grated onion

Beat eggs in ice bowl. Add oil and milk. Blend well. Stir in remaining ingredients. Place in quart casserole. Bake 40-50 minutes at 350 degrees.
