GRILLED POTATO & GRILLED ONION
SALAD
 
6 lg. boiling potatoes, cooked
Olive oil (for brushing)
4 med. onions, peeled & cut into 1/2" slices
1/2 c. olive oil
1/4 c. white wine vinegar
2 tbsp. fresh lemon juice
1 tbsp. sugar
2 green onions, thinly sliced
2 tsp. dried thyme
Salt & freshly ground pepper

1. Wash potatoes and cook, unpeeled on stove until tender. Cut into slices about 1/2" thick, brush lightly with olive oil and grill on both sides until slices have grill marks. (This may be done when potatoes are either hot or cold.) Transfer to a large platter.

2. Brush onion slices with olive oil and grill until tender. Transfer to platter with potatoes.

3. In a small bowl combine olive oil, vinegar, lemon juice, sugar, green onions, thyme, salt and pepper and mix well. Adjust seasonings if necessary. Refrigerate if salad is not to be served shortly, but for best flavor bring to room temperature before serving. Great with grilled steak. Serves 4 to 6.
