TORTILLA SOUP 
8 c. chicken broth
4 fresh tomatoes, chopped
1 onion, chopped
1 can tomato paste
4 oz. green chilies, chopped
1/4 c. fresh parsley, chopped
1/4 tsp. thyme
Monterey Jack cheese, shredded

Simmer all of the above 35 to 40 minutes. To assemble: Put 4 to 5 broken tortilla chips in the bottom of a bowl. Add 1/4 cup shredded Jack cheese or (Mozzarella) then pour in the hot soup to fill bowl.
