SNACKING CAKE 
1 c. (2 sticks) butter, softened
1 1/2 c. brown sugar
1 c. cottage cheese (creamy, not dry crud)
2 eggs
1 tsp. almond or vanilla flavoring
2 1/2 c. flour
1/2 c. cocoa
1 tsp. baking soda
1 tsp. baking powder
2 c. oatmeal, uncooked
Optional 1/2 c. chopped nuts or sunflower seeds

Cream the butter with the sugar, using an electric mixer. Beat in cottage cheese. Add eggs, one at a time. Add flavoring. Combine dry ingredients, gradually add to creamed mixture, mixing well. Add nuts or seeds, if using.

Bake in a greased and floured 9 x 11 inch pan at 350 degrees for 35-45 minutes or until done. You may wish to add a topping or frosting to the cake.
