SQUASH CASSEROLE | |
1 1/2 lbs. squash, sliced 1/2 c. chopped bell pepper 3 c. cooked rice 2 eggs, beaten 1 can cream of chicken soup 1/4 tsp. black pepper 1 tsp. salt 1/2 c. chopped onion 1/2 c. milk 1/2 c. mayonnaise 1 c. cheddar cheese Cook squash and drain. Add all other ingredients except half of the cheese. Mix and bake at 350 degrees until bubbly. Sprinkle the rest of the cheese on top and return to oven until cheese melts. |
