CARROT RING 
2 c. mashed, cooked carrots
2 tbsp. grated onion
3 eggs, beaten
1 c. milk
2 tbsp. melted butter
1 tsp. salt
1/4 tsp. pepper
Cooked, buttered peas
Mushrooms, sauteed in butter

Combine all ingredients except peas and sauteed mushrooms. Stir well and pour into heavily greased 1 quart ring mold. Place mold in baking pan filled with water. Bake at 350 degrees for 45-50 minutes. Cool 10 minutes, loosen and unmold. Fill center with peas and mushrooms mixed together.
