BEER CHEESE SOUP 
1/2 c. butter
2 tbsp. pkg. minced onion
1/2 c. flour
1/2 tsp. dry mustard
5 c. chicken bouillon or chicken broth
10 oz. Velveeta
6-12 oz. beer
Salt and pepper to taste

Melt butter, add onion. Add flour and dry mustard and cook for 2-3 minutes, stirring constantly. Add chicken stock and beer and heat thoroughly. Add cheese and cook until melted and soup is consistency you desire. Salt and pepper.

Awesome flavor!!! I added some garlic powder and a shot of Worcestershire sauce at the beginning for a more savory flavor. I also used a full 12 oz of beer and only 4 cups of stock - consistency was perfect. Adding diced green onion at the very end was the perfect finish!

I had a consistency problem. I used a whole beer, perhaps should have used half. I added a flour thickening agent and it did gain some thickness but not enough. However...it TASTED AWESOME. I am so loving it. I want to try again already and I am still eating it as I post this!! :) Love!

This was the third beer cheese soup recipe I've tried from this website and was by far the best, and simple to make. I only used the 6 oz. of beer and it was plenty.

I made this last night and it was GREAT and easy to make. Hope you like it as much as my family did! I think it'd be good to serve a big hearty salad with this as a side...or make baked potatoes to go with it, you could even spoon some of this soup over the potato! Yum
