POTATO PANCAKES 
3 c. raw potatoes
1/4 c. flour
1 tsp. salt
2 eggs
1 sm. onion, quartered
1/4 tsp. baking powder

Wash, peel, and cut up potatoes. Pat dry with paper towel.

Put all ingredients into blender container; cover.

Press button for 7 to 10 seconds. Use spatula to push potatoes down into blade. Be sure to stop blender.

Pour about 1/4 cup batter for each pancake onto hot griddle. Brown and turn once. Serve with applesauce.
