BAKED ORANGE ROUGHY | |
Orange roughy or other white fish Olive oil butter Seasoned salt Pepper 1/2 c. bread crumbs per piece of fish, or more as desired 1/4 c. green onions or scallions or more as desired 1 c. fresh mushrooms, or more as desired Prepare the fish by washing and dusting lightly in flour seasoned with the pepper and seasoned salt. Heat equal amounts of olive oil and butter in a large skillet until the frothing is done. Brown each piece of fish for at least 6 to 7 minutes on each side. In a separate skillet, melt 2 tablespoons of butter, saute 1/2 cup of onions or scallions as desired. Remove from the butter and in the same butter, brown the bread crumbs until all is absorbed. Finally, melt more butter and saute as much mushrooms as desired until tender. Make a bed of the onions and bread crumbs in a large baking pan. Lay the fish over this and cover with the mushrooms, a dish of wine sauce over the fish is also optional at this point. Bake in a preheated 350 degree oven for at least 20 minutes, or until the fish is flaky. |
