BEEF STROGANOFF 
2 lbs. fillet of beef
Freshly ground black pepper
1/4 c. finely chopped onion
Salt, nutmeg and mace
1/2 c. butter
3 c. sliced mushrooms
1 1/4 c. sour cream
Serve over cooked noodles or white rice

Cut steak across the grain into slices 1/2 inch thick. Season to taste with freshly ground pepper and flatten each slice with a wooden mallet.

Saute onion in half the butter until it just begins to turn color; add sliced beef and saute for about 5 minutes, turning pieces so that all sides are brown.

Remove from pan and keep warm. Add remaining butter to pan and saute mushrooms. Return beef to pan. Season to taste with salt, nutmeg and mace. Add sour cream and heat through. Serves 4-6.
