LEMON - PRUNE BARS | |
1 (6 oz.) can frozen lemonade concentrate, thawed 1/2 c. sugar 1 c. snipped pitted dried prunes 2 tbsp. flour Pinch of salt 1/4 c. chopped walnuts 1/2 c. soft Lenten shortening 1/2 c. uncooked rolled oats 1 c. sifted all-purpose flour 1/2 c. brown sugar, packed To lemonade concentrate, add enough water to make 1 cup liquid. Simmer with prunes in saucepan until prunes are soft, about 5 minutes. Add granulated sugar, 2 tablespoons flour, salt, and nuts. Cook; stir until mixture is thick, about 8 minutes. Cool. Meanwhile, cream shortening. Add combined oats, 1 cup flour, and brown sugar, mixing until crumbly. Pat 1/2 into a pan, ungreased, 8 x 8 x 2 inch. Top with cooled prune mixture. Sprinkle on remaining crumbs. Bake 20 to 30 minutes in a 350 degree oven. Cut into bars. |
