YUMMY BANANA CAKE | |
1 1/2 c. sugar 1/2 c. shortening 1/4 tsp. salt 1 tsp. vanilla 2 beaten eggs 1 c. mashed bananas 1/2 c. buttermilk 2 c. flour 1 tsp. baking soda 3/4 c. chopped walnuts (optional) Cream sugar and shortening. Add salt, vanilla and eggs. Beat well. Add bananas and buttermilk alternately. Sift flour and soda, mix with rest. Add chopped nuts, if desired, and pour into greased, lightly floured 9x13 inch pan. Bake 30 to 35 minutes in 350 degree oven. Spread while oven warm with Sour Cream Frosting. SOUR CREAM FROSTING: Mix 1/3 cup brown sugar and 1 cup sour cream. Spread over warm cake in pan. Sprinkle with 1/4 cup broken walnuts. Bake 5 minutes longer to set frosting. Cut cake into squares to serve. Trim with sliced bananas, if desired. Serves 12 to 15. |
