MORNING GLORY MUFFINS 
2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. chopped nuts
1/2 c. sweetened shredded coconut
1 apple, peeled, cored and grated
3 lg. eggs
1 c. vegetable oil
2 tsp. vanilla

In a bowl sift together flour, sugar, baking soda, cinnamon and salt. Stir in grated carrots, raisins, chopped nuts, coconut and apple. In a bowl, beat eggs with oil and vanilla. Stir the mixture into the flour mixture until batter is just combined. Spoon batter into well greased muffin pan cups, filling them to the top. Bake in 350 degree oven for 35 minutes or until they spring to the touch. Let cool in tins on a rack for 5 minutes, turn out onto rack, let cool completely. Makes 15 muffins.
