BEST BEEF STEW 
6 tbsp. oil
2 lb. beef, cubed
1 onion, chopped
Salt & pepper
3 carrots
2 leeks
4 stalks celery
2 potatoes, chopped
3 c. chicken or beef broth
1/2 c. red wine
1 bay leaf

Brown meat and onion in oil. Add salt and pepper. Add chopped carrots, leeks and celery. Saute 5 minutes. Add potatoes, broth, wine and bay leaf. Cook 35-40 minutes. Serve.
