BEEF AND ZUCCHINI SKILLET 
1 med. onion, sliced
2 tbsp. butter
4 c. sliced zucchini, 1/4 inch thick
1 lb. ground beef
1 c. ketchup
1/4 c. grated Parmesan cheese
2 tsp. lemon juice
1/4 tsp. dried crushed thyme
1/4 tsp. dried crushed oregano
1/4 tsp. black pepper
1 med. tomato, coarsely chopped

In large skillet, saute onion in butter until tender. Add zucchini and saute 1 minute; remove and set aside. In same skillet, brown beef, drain excess fat. Stir in ketchup and next 5 ingredients. Add reserved zucchini and onions, stir in tomato. Cover. Simmer 10 minutes, stirring occasionally. Makes 4 servings.
