PEPPER STEAK 
1 1/2 lb. sirloin steak, remove fat and bone
1/2 tsp. salt
2 med. onions (about 1 c.)
1 c. beef broth
3 tbsp. soy sauce
1 clove garlic, minced or use garlic juice
2 green peppers, 1 inch strips
2 tbsp. cornstarch
1/4 c. water
2 tomatoes, chopped
3 to 4 c. hot cooked Minute rice

Cut steak in strips and brown in a skillet with 2 tablespoons oil. Add salt, then push meat to one side. Add onion and cook tender. Stir in broth, soy sauce and garlic; cover and simmer 10 minutes or until tender. Add peppers, cover and simmer 5 minutes. Blend cornstarch with water. Add to meat and stir until it boils and thickens. Add tomatoes, heat through and serve over rice.
