ESAU'S POTTAGE 
2 tbsp. olive oil
1 c. chopped onion (1 med. onion)
1 clove garlic, crushed
1/3 c. long grain rice
2 1/4 c. water
3/4 c. lentils
Salt & pepper to taste

Film heavy saucepan with oil; add onions and cook over medium heat, stirring often, until onions are softened, about 3 minutes. Add garlic and rice, stirring to coat rice with oil; cook and stir 1 to 2 minutes or until rice is opaque. Add water, lentils, salt and pepper. Bring to a simmer and cook, covered, over low heat for 20 to 30 minutes or until lentils and rice are tender and water is absorbed. Finished dish should not be soupy.

I've been using this recipe for years and it's always perfect! It's great on a cold or dreary night. I do add a teaspoon of cumin as well as a couple of bay leaves. Top with some fried onions and you couldn't ask for better!
