CHERRY COFFEE CAKE 
1 c. butter
1 3/4 c. sugar
1 tsp. vanilla
1/2 tsp. almond flavoring
4 eggs
3 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 can cherry pie filling

Cream shortening and sugar. Add eggs, one at a time beating well after each. Add flavorings. Mix dry ingredients together on a square of wax paper. Add to creamed mixture and mix well.

Take 1 cup of batter out. Spread remaining batter in a 15"x10"x1" sheet pan. Spread can of cherry pie filling evenly over the batter. Distribute the reserved batter over the cherries. Bake at 350 degrees for approximately 35 minutes. Drizzle with powdered sugar icing if desired. Other pie fillings are equally good.

Haven't really made this but it looks exactly like a recipe I used to make years ago. Very easy recipe and quite delicious. You can use other pie fillings like apple also. Can't wait to make this! Good company cake and so easy to make.
