PEACH OR RHUBARB TORTE 
1 c. butter
2 c. flour
Pinch of salt
2 tsp. powdered sugar
6 egg yolks
2 c. sugar
4 tbsp. flour
5 sliced peaches or 5 c. cut rhubarb
1 c. whipped cream
6 egg whites
Pinch of salt
1/4 tsp. cream of tartar
3/4 c. sugar

Mix butter, flour, salt and powdered sugar. Pat in a 9 x 13 inch pan for crust. Bake 10 minutes at 350 degrees. Combine egg yolks, sugar, flour and cream. Put on baked crust. Place peaches or cut rhubarb over custard and bake at 350 degrees for about 30 minutes. Beat egg whites, pinch of salt, cream of tartar and sugar. Spread over as a meringue and bake at 350 degrees for about 15 minutes.
