GREAT VEGGIE SOUP 
2 lg. potatoes
4 chopped green onions
1/2 head cauliflower
1/2 head broccoli
1/2 c. chopped celery
2 carrots, sliced
1 can chicken broth

WHITE SAUCE:

1 stick butter
4 tbsp. flour
1 carton half and half
1 pkg. grated cheese

Pour chicken broth over veggies. Add water just to cover. Simmer until veggies are done.

Prepare white sauce. Be sure white sauce is hot when you add to veggie mixture or it will curdle. Add 1 package grated cheese. Stir until melted and serve. Serves 8 to 10.
