SAUSAGE MIX-UP 
1 lb. Italian sausage
8 oz. can tomato sauce
Green pepper, diced
Green olives, sliced
Black olives, sliced
Mushrooms, sliced
Celery, diced (opt.)

Ingredient amounts are whatever is pleasing to the eye or taste.

Simmer sausage in water; drain well. Slice into 1/2" rings. Brown slightly in pan. Add tomato sauce. Add other ingredients; mix well and simmer to full flavor. Serve on hard rolls or alone.
