FRESH FRUIT SNACK CAKE | |
3 med. apples, peeled, cored & cut into chunks 2 bananas, cut into chunks 2 pears, peeled, cored & cut into chunks 1/2 c. dates, cut into pieces 1/2 c. butter 3/4 c. sugar 3 eggs 1 1/4 c. sifted flour Preheat oven to 325 degrees; grease 9 x 13 inch baking pan and dust with flour. With electric mixer, cream together butter and sugar until smooth. Add eggs, one at a time, beat well after each addition. Gradually mix in flour. Fold in fruit chunks, reserving a few apple and date pieces for top. Pour batter into pan, press remaining fruit into batter to form a pattern. Bake at 325 degrees for 45 minutes or until top of cake is golden and cake has pulled away from sides of pan. Cool 10 minutes, remove from pan and cool completely. Cut into bars approximately 3 x 2 inches. |
