FRESH FRUIT CAKE | |
2 oranges 2 cooking apples 2 ripe bananas 2 lg. eggs 1 1/2 c. sugar 1/2 c. (1 stick) softened butter 3 c. all-purpose flour 1 tbsp. baking powder 2 tsp. baking soda 3/4 c. golden raisins 3/4 c. chopped walnuts Cut oranges with rind into 8 sections; remove seeds. Chop fine in food processor, blender or grinder. Set aside in 2 quart bowl. Repeat with apples, peeling if desired. Add to oranges. Peel bananas, cut up and puree or mash. Mix with other fruits. In large bowl beat eggs. Add sugar gradually, beating until mixture is thick and smooth. Beat in butter. Add reserved fruits. Stir or shake flour with baking powder and baking soda. Beat flour mixture into fruit mixture. Stir in raisins and coarsely ground or chopped walnuts. Turn batter into 2 (9 x 5 inch) loaf pans that have been greased and floured. Bake at 350 degrees for 60 minutes or until cake tests done. Let cool on rack before slicing. Makes 2 loaves, 10 to 12 servings each. |
