CHEDDAR POTATO CASSEROLE 
3 c. mashed potatoes, seasoned
4 eggs, separated
1 c. sharp cheddar cheese, shredded
1 tbsp. chopped green onion
1/2 sm. green pepper, diced
1/2 tsp. celery salt
Salt to taste
Paprika
Parsley sprig for garnish

Place potatoes in bowl, bring to room temperature. Beat egg yolks into potatoes. Stir in cheese, onion, green pepper and celery salt. Salt to taste. In small bowl whip egg whites until soft peaks form. Fold into potato mixture. Spoon into buttered 1 1/2 quart casserole. Sprinkle with paprika. Bake at 375 degrees for 25 to 30 minutes. Garnish with parsley.
