PINEAPPLE COFFEE CAKE 
2 c. Bisquick
#2 can crushed pineapple
1/4 c. sugar
1 egg
1/4 c. brown sugar

Drain pineapple and save 2/3 cup syrup. Mix syrup with 2 cups Bisquick, egg and 1/4 cup granulated sugar. Pour batter into greased 8-inch pan and cover top with crushed pineapple. Sprinkle with 1/4 cup brown sugar and a little nutmeg or cinnamon. Bake 25 minutes. Serves 9.
