MADELINE SPONGE CAKE 
6 egg yolks
2/3 c. sugar
1 c. very fine white cake flour
1/4 c. sweet butter
Pinch of baking soda
Peel of 1 lemon, grated
4 egg whites
1 tbsp. confectioners' sugar

Beat the egg yolks with the sugar until they are white and fluffy, sift in the flour and combine with the egg mixture, continuing to beat for 15 minutes. Add the butter (melted over hot water), the soda, and the grated lemon peel; mix well and then fold in the stiffly beaten egg whites.

Grease a 9 1/2 inch cake pan with butter, dust lightly with flour, and transfer the batter to it. Place in the oven, preheated to 350 degrees, and bake for 1 hour or until done. Turn out onto a cake rack to cool. Sprinkle with the confectioners' sugar and serve. Easy.
