Vegetable oil for frying 1 1/2 c. yellow cornmeal 1/4 c. flour 1 tbsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1/8 tsp. pepper 2 eggs, slightly beaten 3/4 c. buttermilk 1/4 c. chopped onion Combine cornmeal, flour, baking powder, baking soda, salt, pepper. Combine eggs and buttermilk. Add to dry ingredients; add onion; stir to blend. Heat oil 2 inches deep to 375 degrees. Drop batter by tablespoon into hot oil; fry until golden brown, 3 to 4 minutes until cooked. Drain on paper towels, keep warm in 200 degree oven. Makes 30. |
