DATE-PECAN ROLL 
2 c. sugar
1/2 c. coffee cream or canned milk
1/3 c. dark Karo syrup
2 tbsp. butter
1/2 lb. dates, cut in pieces
4 c. chopped pecans

Combine sugar, cream, syrup and butter in a saucepan. Boil mixture until it reaches 234 to 238 degrees or until a drop in cold water forms a soft ball. Remove from heat; add dates. Beat mixture until it cools and thickens. Add pecans; turn mixture out on damp towel. Roll into a log. Cool; cut into 6 pieces. Re-roll each piece into a log about 1 inch in diameter. Chill. Slice into 1/4 inch slices.
