BUTTERMILK BISCUITS | |
2 c. unsifted all-purpose flour 1 tsp. double-acting baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1/3 c. shortening 3/4 c. buttermilk Preheat oven to 425°F. In large bowl combine flour, baking powder, salt and baking soda. With pastry blender cut in shortening until mixture resembles coarse crumbs. Add buttermilk, stir only until mixture forms soft dough. Turn out onto lightly floured pastry cloth and knead 8 to 10 strokes to mix thoroughly. With stockinette covered rolling pin, roll dough to 1/2 inch cookie cutter. Reroll dough pieces to make more biscuits. Place biscuits 1 inch apart on ungreased baking sheet. Bake 12 to 15 minutes or until golden brown. Serve immediately. Makes 12 (2-inch) biscuits. |
