SOFT PUMPKIN COOKIES 
1 3/4 c. whole wheat flour
1/4 c. oat bran
1 tbsp. non-aluminum baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
2/3 c. chopped nuts (optional)
2/3 c. sunflower seeds (raw) (optional)
1/2 c. raisins
1/2 c. unfiltered apple juice
1/2 c. unsweetened applesauce
1 1/2 c. mashed pumpkin

Preheat oven to 350 degrees. Combine ingredients in order given, mixing wet ingredients well. Stir batter until well blended. Drop by tablespoon onto non-stick cookie sheets sprayed with Pam. Bake 10 to 12 minutes until firm and lightly browned. Makes 2 dozen.
