SOUR CREAM CHEESECAKE 
1 1/2 c. crushed graham crackers
4 tbsp. sugar
1 1/2 tsp. cinnamon
1/2 c. melted butter

FILLING:

1 lb. cream cheese
2 eggs, separated
2 tbsp. cake flour
2 tsp. grated lemon rind
1/2 c. sour cream
1/2 c. milk
1/2 c. sugar
Nutmeg

1. Mix together the crushed graham crackers, sugar, cinnamon and melted butter. Firmly press on the bottom and sides of a 9 inch springform pan.

2. Soften the cream cheese and beat in the egg yolks, flour, lemon rind, sour cream and milk.

3. Beat the egg whites until stiff. Add the sugar and continue beating until the sugar dissolves. Fold into the cream cheese mixture.

4. Pour into the prepared crust and bake in a 325 degree oven for about 1 hour.

5. Serve chilled sprinkled with nutmeg. Serves 8.
