HOPPING JOHN 
2 cans black-eyed peas (heated)
1 c. chopped ham
1 c. onion, chopped
1/2 tsp. hot pepper sauce
2 tbsp. oil
1/2 tsp. salt
3 c. rice, cooked

Saute ham, onions and pepper sauce in oil over moderate heat for 5 minutes. Combine black-eyed peas, ham mixture, salt and rice. Heat. Garnish with thin slices of ham.
