OVEN - BAKED FLOUNDER WITH
HERBED TOPPING
 
2 tsp. olive oil
1/4 c. minced celery
4 scallions, chopped
1 sm. zucchini, shredded
2 tbsp. minced fresh parsley
1/2 tsp. dried thyme
1/4 tsp. dried basil
1 1/2 c. soft whole grain bread crumbs
1 1/2 lb. filet, flounder
1 lg. tomato, sliced

Heat oil in skillet then add vegetables. Cook until vegetables are slightly tender. Stir in thyme, basil and bread crumbs. Place flounder in shallow baking dish and cover with bread crumb mixture. Top with tomato slices. Place fish in oven and bake about 35 minutes until done at 350 degrees.
