ARTICHOKE BOTTOMS WITH SHRIMP | |
1 (6 oz.) jar marinated artichoke bottoms 2 tbsp. butter 2 tbsp. flour 1 c. half and half 3 tbsp. dry sherry 1/2 c. cooked deveined shrimp 1/4 c. shredded cheddar cheese 1/4 tsp. salt 1/8 tsp. paprika Drain and arrange artichoke bottoms in 9-inch pie pan. Melt butter and blend in flour. Stir in half and half. Cook, stirring, until sauce thickens. Add sherry and shrimp. Add cheese, salt and paprika. Stir until cheese melts. Pour shrimp sauce over artichokes. Place under broiler and broil until browned. Serves 4. |
