MEL'S BAILEY IRISH CREAM CHEESE 
1 1/2 c. graham cracker crumbs
6 tbsp. melted butter
1/4 c. sugar
5 oz. bar good quality milk chocolate, melted
1 1/2 lb. cream cheese
2/3 c. powdered sugar
4 lg. eggs
1/3 c. Bailey's Irish Cream
4 tbsp. melted butter
1 c. sour cream

Crust: Combine crumbs, melted butter and sugar. Press it up sides and bottom of a greased 9 inch springform pan and chill.

Pie: Cream the cream cheese and powdered sugar. Add eggs one at a time. Add the chocolate and the remaining ingredients. Bake at 350 degrees for 45 minutes. Open oven door and turn off oven. Cool to room temperature.
