MEAT LOAF | |
2 tbsp. salad oil 1 med. onion, chopped 3 whole wheat bread slices 2 lbs. lean ground beef 1 1/2 tsp. salt 1/4 tsp. cracked black pepper 1 egg 1 (8 oz.) can tomato sauce 1 tbsp. brown sugar 1 tbsp. red wine vinegar 1 tbsp. prepared mustard 1. In 2 quart saucepan over medium heat, to hot salad oil, add onions, cook about 10 minutes, stirring occasionally with slotted spoon. 2. Into large bowl, tear bread slices into small pieces, add onion mixture. 2. To the bread and onion mixture add the lean ground beef, salt, pepper, egg and one half of the tomato sauce, stir thoroughly to mix. 4. In 12"x8" baking dish, with hands shape ground beef mixture into 8"x4" loaf; set aside. 5. In cup, with spoon, combine brown sugar, wine vinegar, prepared mustard and remaining tomato sauce. Mix thoroughly. 6. Spoon sauce over meat loaf in baking dish. Bake in 350 degree oven 1 1/2 hours. Serve meat loaf hot or cover and refrigerate to serve cold. |
