WATERMELON PICKLES 
Rind of 1 lg. watermelon
7 c. sugar
1/2 tsp. oil of cinnamon
1/2 tsp. oil of cloves
1 pt. cider vinegar

Peel and remove most of pink melon. Cut into cubes. Cover with boiling water and cook until tender. Make syrup of rest. Bring to boil. P our over drained rind and let stand 24 hours. Reheat syrup and pour over. Let stand again. The third day reheat rind in syrup. Put in sterilized jars and seal. Hot water bath for 5 minutes. Makes 6 to 8 pints.
