DANISH-STYLE NEW POTATOES | |
16 small new potatoes (about 1 lb.; unpeeled) 1/4 c. water 2 tsp. light brown sugar 1/2 tbsp. unsalted butter 1 tbsp. snipped fresh dill In a medium size heavy saucepan, bring 3 cups unsalted water to a boil. Add the potatoes and simmer, partially covered, for 15 minutes or until the potatoes are tender. Drain and cool for 10 minutes; peel off the skins and set aside. Put the 1/4 cup water and the brown sugar into a 10-inch skillet over moderate heat; bring to a simmer and cook, stirring until the sugar has dissolved, about 2 minutes. Add the butter and continue to cook, stirring until it has melted, about 1 minute. Add the potatoes and toss until heated through, about 2 minutes longer. Sprinkle with the dill. Serves 4. |
